Hit the road Jack…I mean Reka

So, what do you do when you feel like munchies but the “Food” envelope is empty? We can’t just hit the store every night we have cravings for chips, right? We’re poor college students for Pete’s sake! (Whoever that poor Pete fella might be).  So the quick fix for our dilemma: crispy, spicy, oven-baked potato chips. Oh, where they good or what?! ;) It even made my huge load of dreaded business homework much more enjoyable! Aaaa, so that’s the secret! :)

This morning started out early with summer and fall class registrations. I finally registered for my very last classes that I need for my Associate’s Degree. So exciting! And praise the Lord for the invention of the Internet! I mean, who would want to get up at 5:30 am to stand in a line for hours in front of an office? Certainly not me!

After packing my favorite boy’s lunch, I gave him a huuuge goodbye smoochie, and made him wish me luck for today :) (It seems to help most of the time…) If you’ve ever seen the 1998 EverAfter movie with Drew Barrymore, you understand why it’s SO important that he always turns around to wave before he gets out of sight. It’s a little family tradition that we have, and I love it! :)

Afterwards I go to enjoy a beautiful bowl of awesomeness: a10-grain feast, fit for a queen!! :) I need to fuel up my energy tank for the day. It’s gonna be a long and demanding one. 3.287 Next on the agenda:
-“Quiet Time”
-Pack lunch and get ready
-Important meeting!!!
-Late lunch
-Running some errands and stocking up at the health store
-Gym (weight session today)
-Evening college classes
-Cook for the week and online class assignments

Quesadilla Diversión

¡Hola! ¿Cómo estás?

So, it all started when my dearest hubby got me a red quesadilla maker -to match my kitchen ;)  
I absolutely love it!! You can make such a wide, wide variety of healthy things in it! We use it all the time. So, why not share the joys of this beauty with others? It’s time for some family Quesadilla fun! 3.283

  *Note to my dearest European friends out there: A quesadilla is usually made with a corn tortilla and is filled with all kinds of fun stuff like cheese, meat, beans, veggies, and sour scream or salsa. The filled tortilla is then toasted until the cheese is melted. Yummy yummness!  :) Mexican cuisine sure has flavor!

Collages12 We just used whole wheat tortillas instead of the corn ones. We all filled them according to our own taste buds. Mine had TONS of veggies of course  :) Collages14 There was a little bit of a line in front of the quesadilla maker, and oh boy, did they smell good or what! However, somehow we all managed to wait for our turn (I learned that from my preschool friends!) and not push anyone out of the way. Yes, it was def. all worth the wait! 

3.284   Drinks were provided by this juicin’ juicer juicy, hotstuff guy!! I mean, just check it out, would ya? He is def. a PRO at this. I should really time him sometime. Would you believe me then?   Collages13 I think everyone had a wonderful time. But we missed you Rae!! Hope you’re having a wonderful time in California. I guess we’ll just have to have another quesadilla party when you come back. ¡¡Espléndido!!  :)    3.285  Hope you’re all having a good week so far. Hope it’s better than mine, because I’m struggling with a really bad cold. I haven’t been sick for a looong time, so this one really punched me out big time. Hopefully I’ll feel better tomorrow, because it will be a B-I-G day for me! Can’t wait!!!!!!!!!! Why you might ask? Well, can you keep a secret? Good. Me too! :)

Lots to pray about and so much to give to the Lord. (Gotta love those times though! Def. keeps you on your knees more!!)   

A couple of sad moments at work and major exposure to contagious germs (in the form of: cute little sick kiddoes sneezing in my face on a daily basis)

We both had some major chips cravings. Stress does that to you yaknow?  :)
Good thing we live close to the store! :) Oh, and who cares that I got some crazy looks for my not-so-sexy outfit?! (Owen’s pajamas are much comfier). What matters is that my “Humbles” hummus chips were worth it!  And that my husband is a genius for revolutionary ideas!   

Early class tomorrow ‘till noon and then Quesadilla Dinner at our place for the family. Can’t wait! I love having people over!

Now go get some healthy chips and de-stress yourself ! :)

STOMP if you’re excited!!!

Two early birds, munching away on some delish superfood power. Collages2‘Cause guess where we get to go today! To a STOOOOOOOOMP performance in Clevelaaaaaaaand, with Evan and Rachel. I’m so excited. We’ve been waiting for this for months. For those of you who have never heard about the show Stomp before, it is a unique, awesome combo of percussion, movement and dance/visual comedy.

They use the following “instruments”:

We’ll def. need some snacks for the day! I don’t go anywhere without stashing some “emergency snacks” in my purse :) You just never know when you might need some healthy calories… 

A Coconut Cream Pie Larabar (my favorite!), an apple, a ripe banana, some seeds and a coffee-to-go please.
That should do it. Plus we’ll probably sto(m)p somewhere for lunch anyways.   
21 Oh, and let’s not forget about these amazing little guys either:

Maki rolls.  An incredible Japanese snack. These are salty rice crackers wrapped in seaweed. We looooove these!

How I missed you Ray!!

Well hello there bloggie Friends!
Here I am, sitting with my back to Ray. Feels warm and cozy. How I missed you Sun Ray! Where have you been? We even had a snow day last week, because you didn’t show up! But we didn’t mind. The park was pretty.   2.27But how much nicer it was this morning to have our family be awaken by you Ray! Even Nora baba had a smile on her face!! 10.10   Then we decided to start out the day with some kitchen adventure! We made some yumyum organic buckwheat pancakes for the first time.  2Tasted so much different than whole wheat. But they were really good. Different, but good. Crispy on the outside and soft in the inside. 
Although buckwheat looks like a grain, it’s actually a seed, from the rhubarb family. It has LOTS of health benefits. And topped with honey, coconut and nutritious fresh fruit, it’s definitely a WINNER!! My sexy Squarehead hubby even squeezed some fresh orange juice for me to go with it.
I am NOW energized for the day.    3.19105…….…106……..107………….OK………..one more…..…2.271   For a little post-workout snack I had my newest favorite: natural, organic peanut butter with dates. The perfect fuel!    3.192Lunch was a salad combo for me (spinach, cilantro, parsley, carrots, beets and almond) with cherry-banana honey tea. And grilled egg sandwich for TS.  3.193Next thing on the schedule: some reading, kitchen duties, grocery shopping and a super-duper tennis game later with my hotstuff Roomie who I happened to be married to. 

What a wonderful week it was!! Thank you Lord. I don’t deserve any of it. How great is your love.

It was a busy week, and when I’m busy, I just forget to drink. the past 2 days I’ve been experiencing some mild symptoms dehydration.
So here I am now, drinking like an elephant, bottle after bottle. Oh well, at least it’s water, right?  :) Collages1
