Just a R-E-D day…
I got to talk to my dad on the phone today!!!!!!!!! Clap your hands and say “Yeeeeeaah”!!!
I haven’t talked to him since …..let’s see…wow,…..January? Can it really be? Time really flies when you’re busy I guess.
But boy, was it good to hear his voice, or what?! I know what you’re thinking. And you’re probably right. I’m a bad daughter. But the thing is (ready for excuses?), every time I get to talk to someone from home, I get soooo homesick and messed up.
Every time I hear their voices, I instantly get the “I-just-wanna-jump-on-a-plane-right-now” sickness. Have you ever been diagnosed with it? Well let me tell you: it’s NO fun. Primary symptoms: sudden loss of focus and discontentment
Breakfast today was red, really red. Haha! Do you ever get up in the morning with one specific color in your head? Well..I do. And today’s was…hmm, can you guess? Bingo! Red indeed!! I don’t know. I’m just weird that way.
Hot multigrain cereal for ME, topped with grapes, strawberries, chia seeds, organic honey and soy milk. Much needed energy to survive my morning business class.
And a pile of pancakes (literally!) for HIM, to get ready for the “joys” of tutoring today (he’s a math tutor at the college).
After talking to my friend Brigi from Hungary (we have our “phone dates” on Saturdays) and my dad, it just hit me: I was so hungry, I could eat a horse. But what to eat when the fridge is bare? I dug out some treasures from the freezer and even found some leftover veggies! So this is what I came up with:
Did I ever tell you how much I love goat cheese? Not only because it has a unique taste, but it’s also an awesome source of calcium, protein, phosphorus, riboflavin and potassium. And it tastes wonderful on almost anything! (It’s a bit pricey though, especially if you buy it from a health store). If you’d like to read up on it, this is a good source to check out.
Rachel and Evan are coming over tonight. We’re gonna play Bananagrams. If you know the game, you can imagine how tough it would be for a non-native English speaker to have even the slightest chance at winning this. But I’m an optimist.!! So, cross your fingers for me
Quicky snack: brown rice cakes with passion fruit spread and dark chocolate chunks for ME.
And spicy butterscotch-chocolate oatmeal cookies for HIM. Oh well. At least there is oatmeal in it, right?
