So what is millet? (“köles” in Hungarian)

Although millet is most often associated as the main ingredient in bird seed, it is not just "for the birds."

Creamy like mashed potatoes or fluffy like rice, millet is a delicious grain that can accompany many types of food. As with most grains, millet is available in markets throughout the year.

Millet is tiny in size and round in shape and can be white, gray, yellow or red. The most widely available form of millet found in stores is the hulled variety, although traditional couscous made from cracked millet can also be found.

Millet is a great source of some very important nutrients, including manganese, phosphorus, and magnesium. (Source)

Jello for dinner!!!!!!!!!! :)

Only 2 more weeks left of this semester!!!!!!  Yaaaay!  :)
But wait! Doesn’t that mean TONS of homework, class presentations and stressful exams? Yep. You got it! Boooo! :(

So I apologize already now for the coming days. Just bear with me. Things will get back to normal! They will! Eventually…

But until then…I’ll be in survival mode!!!!  ʘ‿ʘ

Meal 1 of the day:  Whole wheat toast with a grilled egg, a side of hot multigrain cereal and some grapefruit pulp.

Meal 2 of the day: spinach & veggie salad (radishes, carrots and tomato) with some creamy potato soup (from the freezer), topped with grated Amish Cheddar Cheese. Quickie and yummy!  Collages29

Snackie: Hot, multigrain cereal (left from today’s breakfast) with some icy cold almond chocolate milk, topped with shredded coconut. It was the first time that I tried it like this, but I’ll def. have it again! :)     Collages37

Meal 3 of the day is waiting for me in the fridge. And I’m pretty sure it’s calling my name!! :D

I’m not so crazy about the sodium content and the food colorings in the jello mix, but I think it’s OK to have it every once in a while. 

I mean, com’on! There’s only 10 Calories in it, for the whole box!! You can’t beat that, right? :D Plus the strawberries of course, but those are also low in calories (and are an excellent source of vitamin C and dietary fiber!)

So, is it dinner time yet?  :)

Living Like Royalty

But not only that I like happy endings, but I like happy starts as well. I say, there’s nothing better than kicking the day off with some delicious, colorful fresh fruit!

I definitely feel like royalty not having to make my own coffee. Push a couple of buttons and done!  Collages6What else makes me feel like royalty? Not having to stay up at night to hand knead my own bread dough. Praise the Lord for flea-market bought bread machines!! :)

Love the crunchy seeds on the top… 4.182  Top it with a scoop of low-fat cottage cheese and some all-natural berry jam. It’s the best!!! 

4.23 Lunch was amazingly regal too! I mean, just check out that fancy, shiny plate! Definitely fit for a queen ;) One grilled, folded scrambled egg with a few Romaine lettuce and spinach leaves, some sliced carrots on the side, a red pepper ring and two whole grain cereal balls. (Cooked and served with an ice-cream scooper). Yummy in my tummy! :) Collages41Snacky #2 of my royal day: one banana, topped with some crunchy peanut butter and cinnamon.

Dinner for tonight is already packed: some sweet, juicy, chilled honeydew. Can’t wait to dig in!

BREAKFAST: Whole grain bran flakes with almond milk. Toppings: strawberries, blueberries,
sliced almonds, coconut and a half blueberry-acai yogurt.

LUNCH: a packed fruit-salad (apples, pears, strawberries, oranges, bananas and honeydew)

SNACK: A wedge of whole-wheat homemade bread, topped with melted goat cheese and  fresh curly-parsley. Juicy peppers on the side, rustic-style :)
