So, last night we were invited to some friends’ house for dinner and Movie Nite. We had lots of healthy choices to pick from (yaaay!), including this amazing dessert:

Mascarpone Honey Dip

FOR THE SKEWERS:

  • 4 cups fresh fruit (like Grapes, Strawberries, Blackberries, Melon, Blueberries, Mango, Pineapple), cut into bite size pieces
  • optional: cheese (cut into bite size pieces)
  • 12 pieces wooden skewers

  • 1 cup Mascarpone Cheese, at room temperature
  • 1 cup (fruit or vanilla flavored) Greek Yogurt
  • 1 Tablespoon Honey
  • cinnamon, to taste

Last night I got home from work really late. No. I mean really late.

And I was starving!! What to eat that late though? I wanted to have this soooooo bad:

But guess who got to sleep in this morning? Meeeeeee!!!!!!!!! Till 9:30!!! :) I never have that luxury anymore. Oh, it was absolutely wondrous!
Collages9Then I got a great idea for a revolutionary breakfast. So I got up. And turned our kitchen into a beautiful-smelling coffee shop. image

Fresh ground coffee! Surely the BEST!!! 
4.231 And started my little Springy breakfast project. Ladies and gentlemen (‘cause I know I have at least one male reader. Yaay!!!), may I present to you this morning’s special:

I started out by cooking a bag of 10-grain cereal (wheat, rye, triticale, oats, bran, corn, barley, soy, brown rice, millet and flax) on the stove, until it got firm. I spiced it up (sea salt, cinnamon, nutmeg and ginger) and let it cool a little. 

While waiting, I ran into this hotstuff guy in the kitchen. ♡ ♡ ♡ He asked me for a dance and I said yes. ♡ ♡ ♡ He’s kinda cute, no? And I’m lucky ;)

Then I shaped the hot cereal mix into cute little flowers with a cookie cutter. I sprayed a skillet with a little canola oil and made both side of the “cereal cakes” crispy (on medium heat).

Highly recommended with fruits (especially bananas), some homemade almond butter, honey and coconut. Hmm. Captivating!  Collages11  TS is not a big fan of hot cereals usually, but even he liked the crispy twist on it. Bingo I say!  ☻  Collages13
I even had a little “puppet show” during the meal. Live entertainment. Ha-ha. That was a hit too! ☻Collages14

So this day is turning out fabulous!!! I love hanging out with The Squarehead and having some time for things I/we normally don’t.

I was made to love you ♪ ♫ ♬ ♪ ♫ ♬

I drive 20 minutes to work every day, and 20 minutes back. Oh man. So bo-riiing.  It’s really not my cup of tea!! bored

BUT. Turn on some awesome Christian music, crank up the volume way, waaaay high, and suddenly it’s a totally different story. Part-ay tiiiime! All of a sudden it really doesn’t matter anymore how many red lights I hit or who cuts me off. I just lift my hands (Don’t worry, only one at a time!) up high, and sing as loud as I can!!! Soooooo uplifting. Have you tried it before? You got to! You really do! Well yeah, of course other drivers will look at your weird, but who cares?! :D Having true joy from the Lord is so rare nowadays. But it’s honestly the BEST feeling in the whole world!! You can take my word for it.  ♪ ♫ ♬ ♪ ♫ ♬ 

This morning on my way to work I happened to hear one of my favorite songs on the radio: Made to love by Toby Mac. Do you know it? Oh, it’s soooooo incredibly awesome!!!! You have to listen to it! I love the rhythm and the words especially. I love it so much that I was singing it the whole day, over and over again!! Even now I’m humming it. It’s crazy. What can I say? I grew up in a musician family.

Ⓠ: Do you ever feel like you’re sooo sick of the same routine you can’t take another day? Well, that’s kinda how I feel right now. I think I need a break! Desperately. Good thing God’s presence is a never-ending power supply :)

By the time I was done with all my homework, TS  got home too! I love having him around! He’s so goofy, he always makes me laugh.  :)  

In the evenings he always has a big sweet tooth. At about 7-8 pm usually he starts opening the fridge and all the cupboard doors, asking me if there is “anything” (meaning sweet) in the house to eat. The guy cracks me up! :) So, yeah. Since we’ve been married for almost 4 years, I’m pretty used to pulling out something quicky and yummy from my pockets :)  

So Husband, how about some Crispy Tortillas, Filled With Dark Chocolate, Peanut Butter And Bananas??? Topped with whipped cream, almonds and chocolate syrup??? What’ya think?      Collages21 And the verdict?    He LOOOOOVED it!!!!! ;) Collages19 I know, I know. Not exactly a low-calorie dessert. Ha-ha! But he is such a guy when it comes to calories!!! :) (No offense to any male readers out there). 

Mine was a healthier version though! Of course :) For toppings I used some juicy strawberries, a few sliced almonds, coconut, shredded dark chocolate and some organic honey. Yummness! I’m in loooove…. ♥ ♥ ♥ Collages20Since I already exercised and TS is playing video games, I think I’m gonna do some well-deserved reading and emailing tonight. I also want to catch up a little with the blogging foodie world (research new recipes and exercise tips). It feels SO nice to read something other than my textbooks for a change!!!  :)

Ds 4 Ds :)

It feels so amazing to be home after a long week of work and school! I usually don’t like to be by myself a whole lot, but right now it feels SO awesome! I’m listening to some soothing tunes of smooth jazz by Jane Monheit and Renee Olstead (wonderful artists!) and enjoying this delightful, colorful source of nourishment: butternut squash soup (seasoned with Cayenne), sided with the perfect veggie nest (sliced carrots and iceberg lettuce). For toppings I used: raisins, sesame seeds, smoked TVP and some juicy orange wedges. Not just cleansing and nutritious, but outstanding combo of flavors, if I may say so myself!!  :)

To be completely honest with you (you won’t get upset, right?), I didn’t really feel like doing a post today. I usually can’t wait to sit down with my laptop, edit some photos and update you about my day, but today I have a huuuge business test to take online. So that means that I’ll probably be on the computer for hours studying the online materials! Blah! :( That’s way, waaay too much online time even for a net-junkie like me! :)

However, I can’t help but think of the two/three of you, HefiA fans out there who constantly ask me about the next post and always wait for it so anxiously. I just want you to know that I SO appreciate your interest and support in my blog and my whole journey to health. You’re the BESTEST fans and support group ever!! So give yourself a pat on the shoulder! You sure deserve it! :)

This morning my detox breakfast consisted of some fresh cleansing fruits (grapefruit and kiwi), celery, raw garlic (to be swallowed in whole), plenty of water and a mix of cayenne pepper & diluted apple cider vinegar drink—these stimulate digestive juices and help cleanse the colon. A perfect way to start a new day ;)     

DETOX“Donuts for Dads” (Ds4Ds) was a big hit today I think. We played with our awesome toys, made some cool crafts (mini puppet stage, flag stand and bird feeder) and shaved our very patient dads. Funfunfun!!!!!! :)   

Collages Then we made coffee (by the way, coffee makers are so awesome!!), and had lots of sugary choices, like punch and soft, sweet donuts……Collages1…but I was good and had this instead:

Now it’s time to hit the gym in my lovely “I love my husband, because God first loved me” T-shirt. I love wearing it to the gym where all these macho, all-muscle guys are looking for young, single chicks to impress. Sorry boys. I’m taken. Fish somewhere else.

If you’re European, you might think it’s a lame trick to wear a shirt for “safety” reasons, but here, in America people actually read each other’s shirts!! Weird, huh? :)   Collages17

Then, for the rest of the night I will be studying for the exam. Exciting? Not really!

In a nutshell…

Hi there! I hope your day is going well. Mine started out really early. I wanted to make something healthy and easy to swallow for my friend Joni who is still in the hospital. She is doing much better now and recovering quickly from the surgery. She was up from her bed yesterday already, taking some baby steps!!! I told you she’s a fighter! :) She supposed to be able to go home tomorrow, so that’s really good news. Thanks SO much to all of you who said a prayer for her!!!!

Since she is also a “health freak” :) and she absolutely loooves soups, I made her a creamy, healthy potato soup this morning…

with a loaf of whole wheat bread. Our kitchen smelled so good this morning! I just love freshly baked homemade bread! It gives me such a homey feeling. Hope her family will like it!

…and for myself: I just had a big, juicy grapefruit with some magical detox tea! I love that stuff! It helped me wake up a little I think.

I really like starting the day with superfood fruits that not only energize me, but help get rid of toxins. Grapefruits are excellent choice for that!!

I went in to work earlier today, because tomorrow is “Donuts for Dads” day and there were some last minute things to take care of. I also filled in for Joni for the afternoon Enrichment program. The kids and I had so much fun! Gotta love being a teacher! There’s NEVER a dull moment! :)

After I dropped off the food at Joni’s house, I came home and had this amazing vitamin pile for lunch:

a spinach salad with tomatoes, celery, green pepper, radishes, spring onions, topped with sprouted wheat berries and a grilled egg for some protein.

I am on the elliptical right now, trying to squeeze in my 50 minute workout for the day, to reach my 300 min/weekly goal.

A quicky shower, then evening classes in exactly 40 minutes! So, better go I guess! :) They take attendance very seriously nowadays.
